"Toward a More Expansive Understanding of Food Hubs," by UDP students Megan Horst, Eva Ringstrom, Shannon Tyman, Michael K Ward, Virginia Werner, and UDP professor Branden Born has been published in the Fall 2011 issue of the Journal of Agriculture, Food Systems, and Community Development (JAFACD).
“The idea for the paper evolved out of an ongoing conversation held by five students interested in food system planning, with Branden [Born],” says Megan Horst, a student enrolled UDP’s Interdisciplinary PhD in Urban Design and Planning program and one of the authors of the paper. “It was Branden that suggested that we might be able to use our shared interests to read the book Agricultural Urbanism: Handbook for Building Sustainable Food Systems in 21st Century Cities (Green Frigate Books, 2010) and reflect on its interpretation of ‘food hub.’ We decided to run with it without initial plans of publishing anything, more out of personal interest in the topic and for experience. But we ended up working hard on it, and feeling good about the kind of paper it was. Along the way, we recognized that there actually is very little literature out there about food hubs, and believed our work should be shared broadly--hence the application to JAFSCD. The reviewers gave us really great feedback and were enthusiastic. It was a huge learning process for all of us.”
The five students presented their paper at the AAG conference in spring 2011 and say they may be interested in other venues for presenting it.
Megan Horst will speak about the paper and the topic of food hubs to the Board of Trustees for PCC Natural markets in February.
